Tomato Basil Chicken with arugula salad and brown rice

Est time: 45mins

Start by preheating your oven to 425°

Cut up some basil and wash some cherry tomatoes.

Heat your pan and add EVO

Season Chicken with salt and pepper

Sear the chicken for 3 mins each side(get a nice sear on the chicken)

Add the basil and tomatoes to the pan and then place the pan into the oven

Cook the chicken for 35-40mins in the oven.

Arugula salad-

cut up red onions


2 lemons squeezed

add about 1 oz apple cider vinger

whisk while slowly adding in EVO to create your dressing. It should start to thicken up a little.

Brown rice-

2 1/2 cups of vegetable stock

bring to boil

add 1 cup brown rice

cook for 45 mins
